Fermentation brings new life and complex flavors to your favorite vegetables—all while preserving them for snacking weeks into the future. Lacto-fermentation also plays a critical role in transforming simple ingredients into nourishing, probiotic-filled foods that can support a healthy gut microbiome.

In this fun and informative webinar, you will discover everything you need to know to prepare your own tasty, fermented vegetables. You will learn about lactobacillus and other probiotics and their role in the healthy-gut aspects of fermentation. We will also cover how fermentation affects flavor, How salt, temperature, and time play a role in fermentation, and how to personalize ferments to your tastes and ingredients on hand, as well as important tips regarding preservation, shelf-life, and storage.

The recipes, including ingredients and suggested equipment, will be provided prior to the class so that you'll have time to source ingredients and prepare your ferments along with the instructor.

Instructor: Erica Shea is a product and recipe designer specializing in fermentation and the co-founder of FarmSteady. Before FarmSteady, she co-founded Brooklyn Brew Shop—maker of award-winning Beer Making Kits. Co-author of two books and a Forbes 30 Under 30 alum, she has lectured and taught fermentation classes at SXSW, Etsy, American Museum of Natural History, and festivals across the country.
